If you're looking for suggestions for this at least as far as an inciting incident maybe the first time could just be a mistake. If she's eating constructs during fights then perhaps the opponent simply got in her way by accident. This could also play into her abandoning vegetarianism as well if she reasons (or is persuaded) that she likes the taste of her foes.

I'm not against it, for example, her new in-battle ability will be about eating constructs on the battlefield, but I have to come up with a lore-accurate idea why would she vore any humans.
