I think Paulo is reacting differently because it's different. I mean he is genuinely confused when he is near her. His normal self shrinks and he clams up around her. Reminds me of a scene from fire emblem three houses with Sylvain and Ingrid. He'd been a guy to hit on everyone for no reason, with confidence and without shame(He had issues, but I won't bore you with them) as the game goes along he grows, becomes responsible and his schtick goes away. But his final support conversation with his long time friend Ingrid who he's never seriously tried to hit on(Playfully just to annoy her yet) he then is totally clammed up trying to speak to her to praise how she looks good. He can't even say a full sentence and ultimatly run away ubruptly. Reminds me of that. So it's a bit irronic, in my eyes, that Daisy says this, when his behaviour secretly hints he might seriously like her, like the first time he's ever felt true love for a girl. And he respects her too much to and is afraid he'll just hurt her. As he's done many times in the past.
