Given the all-seeing eye of HR and my damnably high professional standards, I'd make small talk about books I've read recently, assist in a standard professional way given (whatever role I have at this company), and occasionally ask if she'd like to take lunch with me, because there's a really good Indian place close by.

Be patient, and polite you're just starting and she's been here for a while. Help her when you can and try to offer a little service every day. Does she like coffee? Donuts? Maybe pick them up. Above all, listen, she's probably not grumpy at you, and if she is she the office will probably let you know why eventually. Work on that.
