This is actually just a mistake on my part. The requirements for basic biology are to see a physical diagram of a body part and understand (roughly) what's going on. Alice mostly took physics and chemistry in high school, but in middle school she would have still taken some basic biology classes. Nice catch!

Alice is only a high-schooler, so she wouldn't have detailed knowledge of professional level human bodies and biochemistry. That being said, this world's understanding of biochemistry is very... oddly hit or miss. Below a certain size they can't see much, but they do know a surprising amount of information about some parts of the human body in places you might not expect them to, due to the influence of Perks and such sometimes 'giving them the answer.' Organic Mages also take some Perks that help them interact with the human body without harming their patients (obviously), so there's a lot of 'correction effect' going on behind the scenes that most of the natives, frankly, aren't quite aware of. They know something is going on that helps them out with the right Perks, just not how much of an impact those Perks actually have.

There have, indeed, been some very limited attempts to make Organic Magic useful for crop harvesting. Their knowledge of DNA isn't quite detailed enough to try doing anything like gene editing, but it's possible to mess with crops and make them grow faster, and this has been done in the past. It's just not very efficient. Farmers have Perks that do the same thing much better, and organic mages are usually already stretched pretty thin. So most would consider it to be a waste of mana when an organic mage works on growing crops. The teacher doesn't mention this because most would consider it to be more of a 'cool but useless' fact instead of a serious use of organic mage time and mana.

They don’t even know the difference between bacteria and viruses. If they do modify genes the broken mana produced might make it difficult to mass produce and have unintended effects.

Who's to say they aren't? They might not have mentioned it but that doesn't mean it isn't going on behind the scenes

I am a bit skeptical about how deeply they can understand the human body without a knowledge of [Biochemistry] - and that requires a tech base. But Alice is neither a med student or a biochemist, so she likely doesn't know much about Earth's professional knowledge level.

Well, I don’t think they’ve reached genetic level so anything they do with organic magic would have to be done plant by plant.

What stood out to me a bit was that [organic magic] was solely focused on humans and healing. What about seed and crop improvement? I mean, granted, there are probably perks in [farmer] classes, or more specialized classes, but the thought that no one ever try'd to 'improve' them, or used them in animal husbandry, sounds strange. In fact, i can think of using [organic magic] in the creation of hybrid plants or complete new plants at all.

From what I understand, the trouble is getting everything into one enchantment that only needs one enchantment worth of maintenance.

Also instead of trying to sense the object, make some small disks that can attach to whatever you are trying to move and act as anchors for the enchantment to sense and control. Then use the spring to keep it flexible regarding the weight

I didn’t see any system messages, maybe this this will be mentioned in a later chapter or it takes more than one class for those skills.

I think she has to focus on one thing at a time so she won't spread herself too thin. And I don't got the feeling that she isn't thinking about her future. Just because you follow your passion and not the path, that makes you the most money, doesn't necessarily mean that you're throwing away your future. It just means you have to balance out both of these needs and so far, she is doing a pretty good job, all things considered. Even if her research isn't fruitful, she is still a mage and has other paths open for her. And even her research classes have brought her many skills she can use outside of the scientific field if she wants to.

Hmmm the the plate is an interesting problem but there is a “relatively easy” solution. Stop trying to intelligently sense the weight of the material and instead use kinetic magic to create some sort of virtual spring. This would have a maximum weight and would likely be difficult enchanting but seems Tractable once solved

As a high school student, Alice has a decent background in biology, I am surprised the System didn't recognize it when he followed the lesson and it didn't award her a few ranks in an appropriate skill like happened with mathematics in chapter 15. Does she need to do something special for it to happen? "there was a small whirlpool of broken mana to the southeast of the central continent, between the Sigmusi Colonia and Sigmusi Imperia called the whirlpool" - Wouldn't be more appropriate to capitalize the name of the location? "The Whirlpool"

alice didn't take any class about enchanting. she is too focused on her research and not enough about her future. she also doesn't consider other avenues of research other than the system. idk. seems odd. learning to use organic mana seems great imo, she can get rid of the survivor class to do this. imagine being a healer, she can makes lots of money. idk why she doesn't but ok.
