As you pointed out this plan was Subaru's initiative not Emilia's but it was great character development for him since he wasn't doing it out of obsessiveness anymore, But don't worry there is great character develpment for almost every characters in this show. you just have to get far enough to see those episodes. Also I fully agree that Betelgeuse is a really really interesting character way more than you would believe. I can't wait until you get to certain episodes in this show.

Ah I forgot to mention something very important in the previous episode, the blank letter is blank because Rem wrote it on Subaru's behalf because his writing skills are very weak ( remember him practicing writing letters in the mansion)I and since her existence was wiped out from this world the letter's content that she wrote were wiped out too, it was alluded to when Subaru opened Rem's room to show her belongings to Ram and prove her existence to her sister only to find nothing.
