Betelgeuse can force contract on people with high affinity to spirits. Julius mentionned in this episode that Subaru may have a very high affinity to spirits, that's also why when Julius shared Subaru's consciousness with everyone to dispel their illusions and make them come back to their senses, Subaru felt overly sensitive and it hurt him. Since Subaru didn't have a contract with any spirit, Betelgeuse forced a contract on him and took control of his body (turning Subaru into one of his fingers) there is a reason why Betelgeuse can do that but it will be explained latter . I also don't think Emilia saw Subaru and it sucks that he has to lose all the connections he made with Felix and Julius this time around.
