Any boss fight from titanfall 2. The story will forever be one of my all time favourites, and the boss fights were so much fun on master difficulty

I'd say just about any boss from Kingdom Hearts. The idea of using reaction commands in order to deal more damage is pretty fun and keeps you on your toes for if you want to beat someone quick. Especially if there is a punish system for if you're too slow on the command.

Any from cyberpunk, difficulty and different ways to take down a boss makes it fun to play around with

The fight against Kirschtaria from Fate Grand Order. Ridiculously hard, he effectively uses the stars themselves as a set of magical circuits to call down asteroids on you and your servants. Besides that, it's also a battle of ideals between the protagonist and Kirschtaria.
