Bruh sharks can’t fly in our universe it’s a series of a bunch of magical things it’s not that deep lol
Also regarding why Kisame looks so strange and looks like a shark. This could be because he has been using Samehada for too long and has often merged with it, but the flashback shows that he looked like this before. I can only assume that the reason may be Kisame's attempts to master the Sage mode. After all, as we know (or will learn later), the sage mode can be mastered in various places and from various summoned animals, not just from toads. Kisame's summon is sharks, so it may well be that he was also trying to become some kind of Shark Sage, but maybe he didn't have enough chakra reserves or control, or maybe there weren't any teachers suitable (we didn't see any talking sharks, at least), and he was learning on his own. But in any case, something went wrong and he became like a shark during training. Maybe he even mastered the sage mode partially, no wonder he has such incredible amounts of chakra according to many characters, as well as the ability to absorb chakra even without Samehada. Just because of this mode, he is forever now in such a strange state, half human and half shark, but with increased chakra volumes and enhanced techniques. Well, or even as an option, he is just from some special clan associated with sharks, such as Orochimaru is clearly somehow connected with snakes from birth.
