i believe chess isn't in the olympics because ultimately games take hours to play, and generally high profile chess tournaments are round robin and obviously you can't do a round robin with 200ish people and to the average spectator it's not very interesting so they couldn't really put it on tv without people complaining or something, although blitz or rapid could probably work
