I think it's more along the lines of "water is pure". Like in ye old witch trials they would hog tie the "witch" then toss em into a river. If they sank they were fine but if they float theyre a witch, because the pure-ness of water rejects the evil of the witch. So demon/evil/ vampire can't cross because it's pure and they're not. I think the reason vampires couldn't see themselves in mirrors is because they used to be made out of silver, a "pure" (not evil) metal

I think the reasoning behind why vampires can’t cross water is because Jesus could walk on water. The whole good vs evil thing
