Are the plans for the trebuchet available anywhere? I'm looking to build this with my son's Cub Scout den, and having a "known working" design would be a big head start!

It does change due to mass being a factor in the gravitational potential energy to kinetic energy transfer. But tennis balls and golf balls are so similar in weight that it doesn't make a noticeable difference in comparison to the drag variation.

Does the velocity change depending on the mass of the projectile (within reason), or is it mostly dictated by the geometry of the trebuchet?

Yep, unfortunately tennis balls seem to have a high amount of drag, so it decelerates very quickly, only landing 50-60m away. A golf on the other hand tops out at 150-180m!
