Thank you

Will Christopherson

Made this last night - but the skin for me was the opposite of "extraordinarily crispy, deeply flavorful". It was soggy and I did not enjoy eating it at all. What went wrong? Also, I got this very expensive thermometer based on this video - quite excited to use it last night... Only to find out mine didn't work at all out of the box. I got a very expensive lemon. 😡

Any suggestions on replacing the butter for a recipe like thks? I'm allergic! 😭

John Tirado

I made this last night for dinner. It turned out great and will be in my rotation. Thank you Chef

Chet Beefcake

Has anyone tried this on a grill? How were the results?

JD

This recipe did not disappoint. Really beautiful, succulent chicken. Thank you. And the Combustion thermometer is a great tool. Provides core, ambient and surface temps. The CEO Chris Young often answers questions directly on the company's Reddit.

Steve Muller

Just tried this. Skin not crispy but inside seemed done, not overdone. Maybe my temp was too low?

I forgot to brine my chicken (I use the Zuni Cafe method) and then stumbled across this on your Insta page and came over for a watch. Thank you for saving my dinner tonight! I live in Switzerland and am lucky enough to have a combi steam oven. I had already planned to make a Thai inspired satay whole roast chicken so changed up the herb profile (Thai basil, ginger, lemon grass, garlic and fish sauce in the mayo along with your scallions tip - really a great addition that I would not have thought of). My jus had a large knob of ginger in it as well. I had a chicken of just over 1 kilo, cooked at 220C low steam. I used my oven thermometer in the breast and went with your temps. Using steam I switch to broil with fan at the end for about 3 mins to get a more crisp on the skin. Fabulous results! Thank you for another winner.

My 9 year old says best chicken ever. I found mine to be a little greasy and the bottom of the thighs did not brown at all. I am not sure exactly what went on. I will try it again I did smear some of the mayo mixture under the skin too maybe that made it greasy. It was good though.

And for those of us triggered by the thought of the use of mayo! 😉 jk!

I want that thermometer so bad but I don't eat a lot of meat. (Probably closer to once a month than once per week.) Any other things this little wonder stick can work its magic on*? I'm here to be persuaded... *No bread. I have been baking my own for years now and don't need help from a thermometer.

Telanis

Definitely yes -- cucumbers are over 95% water, so it's not far off just directly adding the same amount of water! Also keep in mind that the allium flavor will lessen with cooking -- and comparatively lessened by being a relatively small amount on a flavorful chicken -- so it should be a fair bit stronger than desired if you were to have it raw.

I made this tonight and of course, I didn't follow the recipe exactly. I'm a single person and a whole bird is just too much to deal with. I started with a small package of bone-in, skin-on thighs, which I de-boned so I could make the jus (which was the best part of the meal). I kind of messed up on the mayo marinade. I had a bunch of fading scallions (used the greens, saved the whites), a small shallot, no herbs, plenty of garlic. I totally forgot the lemon. I blitzed everything, and tasted, realized how alium forward it was and added about half an English cuke to save it. The thighs roasted until an internal temp of 190F and were delicious, but no crispy skin. Am I correct in thinking that the cucumber added too much water to the marinade?

Scott

Silly question perhaps, but would cooking the chicken upside down (breast down) address the issue? That way the breast isn't exposed to the heat while the dark meat is.

Tacita C

Will your recipe for vegan mayonnaise work for this? I’m assuming not, since no egg…

etherdog

Yes, that is what Kenji was saying. If you want your breast to be succulent, take it out at 145F and the residual heat will take it up to at least 155F and possibly to 160F. Tent it lightly in aluminum foil. The legs/thighs should be about 160-175F and should rise to 185F+.

etherdog

A grating question is what are you holding in your dominant hand.

Anthony Chan

Question: Can I take out the chicken from the oven like 5-10 degrees before your recommended target core temperature to finish the cooking with the residual heat?

September Dexter

I also plant the tip of the microplane on the cutting board and move the the ingredient I'm grating along it.

Erick

I love that Duke's has spread far and wide.
