I was wondering the same thing, and now I'm eagerly awaiting these eggcelent creations.

I don’t like the mess of trailing egg white muscus, so I either crack egg on egg over the bowl, or against the side of the bowl but on the inside of the bowl. If I’m cracking an egg to fry in a pan, I crack the egg inside the pan.

I swapped from edge to flat surface a few years ago and I can't say I've noticed more broken yolks or stray egg whites so I'm going to keep doing it because it works for me. Although cracking two eggs against each other does sound fun and I may try that tomorrow when I make my egg fried rice.

Burning question: what did you do with all those eggs?!

I wonder if you could ensure that the egg in your desired hand will break more often, by hitting a weaker surface against a strong one. Curved bottom vs side? I'm not sure it's worth experimenting with since the edge-of-bowl method is so reliable.

a) I appreciated the puns; b) I appreciate the egg-speriment overall; and c) I've tried all these as well and have landed on a variation of the edge-of-the-bowl method by giving the shell a sharp rap with a utensil handle or table knife, to give me the clean split without damaging the yolk.

Just gonna throw it out there that, in the UK, our supermarket eggs can't be washed before being sold (by law) and yet we all grew up using the edge of the pan/bowl to crack eggs. Also, lots of Brits think that raw egg white is instant death but are fine eating cake mix.

I grew up on the edge version. Though I have to add that we did not do one crack, but like a one, two, three! This was in order to get two slight cracks in the middle before the split. I think that stemmed from wanting equal shell parts being used to separate eggs by going back and forth. Or just lack of confidence.
