I work in food tech and do a lot of research in food kitchens. The main issue is that you can’t guarantee what you’re getting. There are kitchens centers (like CloudKitchen) but also many brick and mortar restaurants (Buffalo Wild Wings is an example) that sign up to “host” for the different ghost restaurants. You then have issue with legitimacy for dietary restrictions, freshness, and health food scores.
