I used to make candy on occasion and to make cordial candies, you make the creamier layer and chill the mixture until it’s able to be wrapped around the fruit, then chill the wrapped fruit as you temper the chocolate. When you cover them, the filling is cold so that as it sits at room temp, it melts into a liquidy center. Cordial is also liqueurs. Cordials are made by mixing or redistilling neutral spirits, brandy, rum or other spirits with natural ingredients such as fruit, herbs and cream. Anne of Green Gables has a plot point around a child character getting drunk on cordial.
