Abut that fat cell number thing, it seems that overeating in childhood sets the kid up for obesity problems in adulthood as they create more fat cells that remains constant throughout life (https://www.nih.gov/news-events/nih-research-matters/fat-cell-numbers-teen-years-linger-lifetime). So, it behooves parents to control their kids eating habits.

One might argue that everything is physics and biologists & chemists are simply in denial :-). I personally enjoy Sabine's non-physics ventures, but to each his own.

Physics?

After I turned 40, I started to gain weight at the rate of ~2 kg/year. Ten years later, I was 20 kg heavier and 'overweight'. Fortunately, it leveled off there for a decade or two. But then the trend restarted. Thus, I must conclude that my obesity is caused by unaddressed weight gain.

Yeah, I agree, but the metabolism boost is actually pretty minimal in reality. Then again, one reason obesity is such a tough nut to crack is because all of the factors play only a handful of percentage points of a role. As Greggery points out below, it's likely an ensemble effect.

"just not a role in the calories in vs out equation": I will not find the article (because I am too lazy😁), but it has been reported that (generally speaking) people get more benefit from getting up on a regular basis than they do from working out once a day and sitting most of the day. To me it suggests moving on a regular basis helps to elevate your metabolism (or keep it elevated). Clearly it is best to do both, but for many of us our job is at a desk and our productivity is always under scrutiny. In the article (or newscast) they coined the phrase "Sitting is the new Smoking".

Hi D Brown, yes, I have seen fat landscapers and fat farmers -- a lot of them. You might be interested in this paper from 2012 looking at the Hazda tribe in Tanzania, a group of hunter-gatherers. The main conclusion is that the daily energy expenditure is the same for the Hazda as for typical Western lifestyles. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3405064/ Still, I agree with you that our sedentary lifestyle plays a role, just not a role in the calories in vs out equation. There are so many other psychological, sociological, and physiological ways that exercise, or lack thereof, affects us. I would put our calorie-dense-nutrient-poor diet above our sedentary lifestyle, personally, but, hell, if the solution was this simple, obesity would be solved by now.

Although i like the direction Jeffrey Mendenhall's thoughts are going in the comment, perhaps it is the ensemble of contributing factors rather than a root cause. So studies isolating one or the other won't pick that up.

The human body does literally burn food. If you examine what goes in (via lungs, mouth etc.) and what goes out (via lungs, urine, feces, it is clear that the body oxidizes stuff very much like physics considers burning. Everything gets oxidized (example-carbon gets oxidized to CO2 proteins etc. N gets burned to urea etc). The burning occurs in such small packets, one molecule at a time over large volumes that the heat from burning increases all over and not at one point.

Long time listener, first time responder. As a former physicist turned medical professional, I share your dark matter skepticism and views on dark energy. However, I really expected a bit more rigor on this one. Obesity is excess mass (M) which is excess potential chemical energy. dM/dt = (Calories in - Calories out)*caloric density of a particular human body. Caloric density can largely be regarded as constant over time, since muscle and fat are equal within a factor of two, and large changes are uncommon outside of body builders. dCalories in/dt is easy to find data on. It was 25% of total calories over the past 50 years for Americans: https://www.businessinsider.com/american-calorie-intake-last-52-years-diet-food-eating-increase-science-2017-6 . dCalories out/dt is less easy to compute. Generally humans are very inefficient creatures and the bulk of our caloric intake is needed for maintenance of life, and those fancy brains that we use to post cat memes to instagram. Humans use far more calories than full grown gorillas, despite the sizeable mass difference (well, at least before 1980), see https://www.science.org/content/article/scientist-busts-myths-about-how-humans-burn-calories-and-why. Less exercise or physical activity doesn't help, sure, but lets put some numbers to it. The mean calories expended directly from working....at work. has decreased about 100 per day from 1960 until today (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3102055/), which comes disproportionately from loss of intense labor jobs (which were half of jobs before) traded for light or office tasks. In general we have an excess of conveniences. Food has been processed to be more palatable and energy dense, and engineered to be easier to consume, but this is really just the icing on the cake. Genetics cannot explain the obesity epidemic because obesity is generally regarded as maladaptive so there is no reason why we should be seeing more of it over time in the absence of other factors. Environmental factors, pollution, viruses, are minor decreases, at best, to dcalories out/dt, but more likely function better as feel good excuses for a spare tire. Good job highlighting the tiny uncertain role they play. So at the end, we are left with ddM/50 years from 1960 - 2010 = (700 more consumed calories per American per day + 100 fewer calories expended from working at work + minor other factors), so 800 more per day. Over a similar time period, the average American weight has increased 25 pounds (https://www.cdc.gov/nchs/pressroom/04news/americans.htm#:~:text=Meanwhile%2C%20the%20average%20weight%20for,to%20164.3%20pounds%20in%202002.) That converts to 87500 excess kcals in fat. Which, at a caloric excess of 800 per day, would only take 110 days to accrue. Ergo we have overexplained the reasons for obesity and other factors aren't needed. The reason weight hasn't went even higher is presumably due to the increased energy requirements for the muscle required to lug around the extra 25 lbs of fat and pump blood and oxygen to it every minute of the day. Because obesity has deleterious effects on the lifespan, folks that gained the most are least likely to be still here contributing to the average weight overall. Anyway, hope you'll consider incorporating some more numbers behind the big ticket items in obesity epidemic drivers in an upcoming episode. TL;DR This isn't like other missing mass problems in physics. We can easily explain all the increase in weight with just increase in calorie intake. We can go the extra kilometer and add in decreased physical work at work, but there is little point in continuing beyond that. hypothetically, if we someday find all the mass of dark matter hidden in ultracold ionized hydrogen atoms in extended galactic halos (whose electrons were stripped away by, e.g. SMBHs among other processes), would we still need to build another xenon detector?

The Answer: Sedentary Lifestyle. How many fat landscapers do you know? At some point in our lives many of us go from being on our feet on a regular basis, to being stuck at a desk on a regular basis. And the hour a day workout is not enough as we age and our metabolism slows. Bad food choices are also a factor, but personally I feel that the lack of regular activity is a major contributing factor. Case in point: After about 18 months of covid lockdown, my previous employer required people show up on certain days. Almost everyone I worked with had gained 10 to 20 pounds, if not more. Prior to covid, they were always getting up and going to the next meeting or just going for a walk, or going to get coffee or lunch. But I was able to exercise more and get more sleep. I had less stress and also ate less. As a result, I was able to lose 20 pounds. I also grew about 3/4 of an inch.

I just watched a Tracey Ullman comedy sketch about taking down controversial statues in London in which her character says "It's a very complicated question and what very complicated questions need are very simple answers." Having spent a fair bit of time today reading youtube comments, that is surely what most people appear to want -- just cut simple carbs, just cut sugar or high fructose corn syrup, it's just a matter of willpower... Yes, it is a "simple" calories-in-calories-out equation, but not all calories are equal and the equation has a lot of psychology and physiology tied up in it. For most of my life, I never had weight issues, but the menopause transition was not kind to my waistline. Pre-menopause, I was in the "just a matter of willpower" camp, but now I see how arrogant that position was. Fortunately, my hormones and metabolism have stabilized and I can again control my weight, but I now know what it's like to not have that control.

So it's the genes and the environment. Only one of these two can be changed, a bit. Have you heard about the trend of plants becoming like 10% or so less nutritional due to the higher CO2 concentration in the atmosphere that makes them fat, too? I really like how you mention numbers Sabine ! Or, how you mention the lack of numbers, or control groups, or how causation is really not determined. It increases confidence in what I learn, and reduces stress or anxiety. It can only be good for my weight.
