They went over it in the post credit little skits they do, since it’s just a goofy answer lol. She basically just ate so many of those pink & green Sakura rice cakes as a child that eventually her hair turned that color as a result

Yeah, I’m very curious how Mitsuri’s hair color changed out of nowhere… They just skipped over that in her backstory, considering we saw baby Mitsuri with black hair
