Umm actually the Maillard reaction is the creation of melanoidins due to the interaction of amino acids and sugars as the sugars are reduced in the temperature range of 140-165 Celsius. At higher temperatures, sugars undergo their own process, (similar but different results) of carmelization. So both a marshmallow and (elements of) a steak could undergo both reactions, depending on the presence of amino acids, sugars, and the temperature range.

Pro pro pro move: you can get a chocolate pocky and use it to toast your marshmallow, and then it's efficiently pre-s'mored. Does not work if the fire is too hot for your hand to be that close, but otherwise it's really fuckin good, you're welcome.

Not to be too controversial, but as a camp pro, add a square of caramel at the top of the marshmallow skewer. When you pull the mallow off, the caramel oozes into the middle. Game changer.
