As others pointed out there was one you missed. Stans Tatoo. If you play the audio of the head backwards it says "You've disturbed my slumber. Enter my mouth children. Enter your destiny!" This is also where the codes get interesting. The weird letters and numbers are two different codes to solve. Decrypting them you get two different messages. The lletters code gives a clue how to solve the other. Taken together they read: "FROM THE FIRST UNTIL THE LAST / SEARCH THE CODES OF CREDITS PAST / ONE MEANS ONE SO SEARCH THEM ALL / WELCOME TO GRAVITY FALLS." The numbers code says: "I WAS SO BLIND. HE LIED TO ME. THE DARKNESS IS NEAR." For what it's worth none of the codes are too spoilery, they just hint at things to look for in upcoming episodes or ominous forshadowing of future events.

The bear thing: You are talking about The Country Bear Jamboree which was at Disneyland. I think the bear you're thinking of is named Zeke. The attraction is a stage show featuring audio-animatronic figures. Most of the characters are bears who perform country music. Characters rise up to the stage on platforms, descend from the ceiling, and appear from behind curtains. The theater includes three audio-animatronic animal heads mounted on the walls who interact with characters on stage. I barely remember the show myself, but used to have an album from them on record when Inwas younger which had a photo of all the bears and of the stage.

Upon my umpteenth rewatch the always facing left guy really only works in 2d animation. It's also pretty cool how some of the stuff in these make small appearances or are reworked in future episodes. Thirdly a lot of people were scared by animatronics back in the day apparently.
